Upcycled food waste turned into flavour bombs
How does it work?
REDUCED is an innovative, upcycling food company which specialises in creating high-quality food products and flavour enhancers on upcycled ingredients. Believing that great flavour is key to reduce food waste, they use fermentation as a tool to create intense taste in the surplus raw materials that they use in their production. They grow and use koji (Aspergillus oryzae) as it can produce enzymes and thus open up for umami taste (protease).
Why is it needed?
According to AQMD, "agricultural Waste is unwanted or unsalable materials produced wholly from agricultural operations directly related to the growing of crops or raising of animals for the primary purpose of making a profit or for a livelihood." A WWF report from 2021 shows that 1.2 billion tonnes of food produced globally is lost before it even leaves the farm. REDUCED uses protein, vegetables and other food sources that are left over in the food industry and agriculture. E.g. they use bones from bull calves, which are left over in milk production, chickens from egg production, beach crabs and second sorting vegetables.
How does it improve life?
Their mission is to reduce food waste by using vegetables, protein and other nutrients that are left over in the food industry. Always with a focus on taste, quality and sustainability. Right now, REDUCED sell their stocks in stores and are developing fermented flavour enhancers. The purpose is to create even more flavour in what others consider waste. They hope their approach to food production can contribute to the reduction of food waste and at the same time bring healthy and tasty food products into many people's homes and kitchens.
